Build the Sauce: Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a boil and cook until slightly thickened, about 10 minutes. Stir in coconut milk and return to a boil. Simmer until the sauce thickens, about 10 minutes more. (20 minutes)

Finish and Serve: Stir in lime juice and any accumulated chicken juices. Return chicken to the skillet, spooning sauce over the top. Simmer until heated through, about 2 minutes. Garnish with fresh cilantro before serving. (2 minutes)

For a richer flavor, use full-fat coconut milk.
Adjust the amount of curry paste to your preferred level of spiciness.
Add vegetables like bell peppers, mushrooms, or bamboo shoots for extra texture and flavor.
Serve with steamed rice or naan bread to soak up the delicious sauce.
