In a separate, larger bowl, whisk together the coconut flour, packed brown sugar, and shredded unsweetened coconut. Ensure there are no lumps of coconut flour. (3 minutes)

Gently pour the wet coffee mixture into the dry flour mixture. Stir with a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine. (2 minutes)

Spoon the batter evenly into the prepared muffin cups, filling each about 2/3 full. (3 minutes)

Bake in the preheated oven for approximately 20 minutes, or until a wooden toothpick inserted into the center comes out clean or with just a few moist crumbs attached. (20 minutes)

Allow the muffins to cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!

For an extra boost of coffee flavor, add 1 teaspoon of instant espresso powder to the dry ingredients.
Store leftover muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
These muffins can also be frozen for longer storage. Wrap them individually in plastic wrap and then place them in a freezer-safe bag or container. Thaw at room temperature before serving.
