For a richer chocolate flavor, use dark chocolate for the ganache. To prevent the cake from cracking when rolling, make sure it is still slightly warm when you roll it up the first time. If you don't have marzipan, you can use other decorations such as fresh berries, chocolate shavings, or edible glitter. The ganache can be made a day in advance and stored in the refrigerator. Let it come to room temperature before spreading.
