Transfer the beet mixture to a glass bowl or airtight container. Cover and refrigerate for at least 8 hours, or preferably overnight, to allow the beets to fully absorb the pickling liquid and develop their signature sweet and tangy flavor. (8 hours)

For an extra layer of flavor, consider adding a star anise or a few whole cloves to the pickling liquid during simmering.
If you prefer a less sweet pickle, reduce the amount of sugar by 1/4 cup.
These pickled beets can be stored in an airtight container in the refrigerator for up to 2 weeks.
