Season the chicken: In a medium bowl, toss the chicken pieces with salt and pepper. (2 minutes)

Sear the chicken: Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer (work in batches if necessary to avoid overcrowding) and cook, stirring occasionally, until browned on all sides and cooked through. This should take approximately 5-7 minutes. Remove the chicken from the skillet and set aside on a plate, covered to keep warm.

Cook the Noodles and Vegetables: Meanwhile, bring a large pot of salted water to a rolling boil. Add the noodles and vegetables. Cook according to package directions, usually about 3 minutes, or until the noodles are tender but still have a slight bite.

Make the Teriyaki Sauce: In a separate bowl, whisk together the soy sauce, mirin, sake, brown sugar, minced garlic, minced ginger, and red pepper flakes (if using). (2 minutes)

Simmer the Sauce: Pour the teriyaki sauce into the same skillet used for the chicken. Bring the sauce to a simmer over medium heat, stirring frequently, until it thickens slightly, about 3-4 minutes.

Combine: Add the cooked chicken back to the skillet with the thickened teriyaki sauce. Toss to coat the chicken evenly. (1 minute)

Finish and Serve: Drain the noodles and vegetables thoroughly and add them to the skillet with the chicken and teriyaki sauce. Toss everything together until well combined and heated through. Serve immediately. Garnish with sesame seeds and chopped green onions, if desired. (2 minutes)

For an extra layer of flavor, marinate the chicken in 2 tablespoons of the teriyaki sauce mixture for at least 30 minutes (or up to overnight) before cooking.
If you prefer a thicker sauce, whisk 1 teaspoon of cornstarch with 1 tablespoon of cold water and add it to the sauce while it's simmering. Cook for another minute, or until thickened.
Feel free to substitute other vegetables, such as snow peas, mushrooms, or bok choy.
Serve over rice for a heartier meal.
