Follow The Directions

01

Step

In a mixing bowl, whisk together the extra-virgin olive oil, pure maple syrup, apple cider vinegar, white sugar, and salt until the vinaigrette is smooth and emulsified. (5 minutes)

02

Step

In a small skillet over low heat, cook and stir the chopped walnuts until they are lightly toasted and fragrant, being careful not to burn them. Remove from heat and set aside to cool. (3-4 minutes)

03

Step

In a saucepan, bring the chicken broth (or vegetable broth), farro, dried oregano, and dried basil to a boil. Reduce the heat to medium-low, cover, and simmer for 10 minutes. Remove the saucepan from the heat, keep it covered, and let it sit until all the liquid has been absorbed and the farro is tender. (30 minutes)

04

Step

Transfer the cooked farro to a glass bowl and allow it to cool to room temperature. (30 minutes)

05

Step

Once the farro has cooled, stir in the toasted walnuts, chopped green apple, dried cherries, and chopped flat-leaf parsley. Drizzle the sweet vinaigrette over the salad and toss gently to coat all the ingredients evenly.

06

Step

Cover the salad and refrigerate it until thoroughly chilled, allowing the flavors to meld together. (at least 30 minutes)

For an extra layer of flavor, consider adding a sprinkle of crumbled goat cheese or feta cheese before serving.
If you prefer a nuttier flavor, toast the walnuts in the oven at 350°F (175°C) for 5-7 minutes instead of using a skillet.
The salad can be prepared a day in advance, allowing the flavors to deepen and intensify.
