For a more intense coffee flavor, add a tablespoon of coffee liqueur to the espresso mixture. Make sure your mascarpone is at room temperature to avoid lumps in the cream. The key to a light tiramisu is gently folding in the egg whites, not stirring. Don't over-soak the ladyfingers, or they will become soggy. For an alcohol-free version, substitute the Marsala wine with coffee or a non-alcoholic Marsala substitute. If you don't have ladyfingers, you can use slices of sponge cake or biscotti cookies instead. I find that dusting the cocoa powder through a fine-mesh sieve helps to distribute it more evenly.
