Step

Blanch the Basil: Bring a large pot of water to a rolling boil. Add the basil leaves and cook, uncovered, until they turn a vibrant green, about 20 seconds. (20 seconds)

Shock in Ice Water: Immediately transfer the blanched basil to a bowl of ice water to stop the cooking process. Once the basil is completely chilled, squeeze out any excess moisture and pat dry with a paper towel. (5 minutes)

Combine Ingredients: In a blender, combine the blanched basil, chopped garlic, lemon juice, 1 tablespoon of olive oil, drained garbanzo beans, and drained white beans. Season generously with salt and freshly ground black pepper. (2 minutes)

Blend Until Smooth: Cover the blender and blend until the mixture is almost smooth. Then, add the remaining 2 tablespoons of olive oil and continue to puree until the hummus is perfectly smooth and creamy. (3 minutes)

For an extra smooth hummus, peel the garbanzo beans before blending.
Adjust the amount of lemon juice to your preference. Start with 1 tablespoon and add more to taste.
Store leftover hummus in an airtight container in the refrigerator for up to 5 days.
Serve with pita bread, vegetables, or as a spread for sandwiches and wraps.
