Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish with butter and 1 teaspoon oil. (5 minutes)

Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain. (15 minutes)

In a large bowl, stir together the sausage, chopped stewed tomatoes (with their reserved juice), diced onion, Cheddar cheese, Monterey Jack cheese, remaining 2 teaspoons olive oil, parsley flakes, onion powder, garlic powder, salt, and pepper. Add the cooked and drained elbow macaroni and stir to combine all ingredients. Pour the macaroni mixture into the prepared baking dish, and sprinkle evenly with the shredded American cheese. Cover the dish with aluminum foil. (10 minutes)

Bake in the preheated oven for 30 minutes. Then, carefully remove the aluminum foil from the baking dish, increase the oven heat to 425 degrees F (220 degrees C), and bake for another 15 minutes, or until the cheese is melted, bubbly, and the top is golden brown. (45 minutes)

Remove from oven and let cool for 15 minutes before serving. (15 minutes)

For an extra layer of flavor, try adding a pinch of red pepper flakes to the sausage and tomato mixture.
Feel free to experiment with different types of smoked sausage, such as kielbasa or andouille.
If you don't have stewed tomatoes on hand, you can substitute with crushed tomatoes or tomato sauce, adjusting the seasoning as needed.
To prevent sticking, ensure the baking dish is thoroughly greased before adding the macaroni mixture.
