Pour in milk, a little at a time, and whisk continuously until the sauce is thickened but still pourable, 3 to 4 minutes. (4 minutes)

Stir Parmesan cheese into sauce until melted; season generously with salt and pepper. Pour sauce evenly over the cauliflower and sprinkle Cheddar cheese over the top. (2 minutes)

Bake in the preheated oven until the cheese is golden brown and bubbly, 20 to 25 minutes. Let cool for a few minutes before serving. (25 minutes)

For an extra layer of flavor, consider adding a pinch of nutmeg to the cheese sauce.
Feel free to experiment with different cheeses! Gruyere, fontina, or even a touch of blue cheese would be delicious additions.
If you're short on time, you can steam the cauliflower instead of boiling it.
To prevent the cauliflower from becoming too soggy, make sure to drain it thoroughly after cooking.
