Season with a pinch of salt and pepper. Spoon the sausage and vegetable mixture evenly over the cauliflower tots in the prepared dish. (15 minutes)

In a large bowl, whisk together eggs, milk, salt, black pepper, and cayenne pepper (if using) until well combined. Pour the egg mixture evenly over the sausage, vegetables, and tots in the baking dish. Gently press down to ensure the tots are submerged. Sprinkle evenly with shredded Swiss cheese and grated Parmesan cheese. (5 minutes)

Remove the foil and continue baking until the casserole is set, the top is golden brown, and a knife inserted into the center comes out clean, about 30-35 minutes more. For a richer flavor, use whole milk or half-and-half instead of fat-free milk.
Feel free to substitute other vegetables you enjoy, such as mushrooms, spinach, or zucchini.
If you want to add some spice, consider adding a pinch of red pepper flakes or a dash of hot sauce to the egg mixture.
The casserole can be assembled and chilled up to 24 hours before baking. If baking from chilled, add 10-15 minutes to the baking time and ensure the center is heated through.
