Follow The Directions

01

Step
5 mins

Preheat oven to 450 degrees F (232 degrees C). (5 minutes)

02

Step
10 mins

Prepare the cauliflower: Remove the outer green leaves and trim the base of each cauliflower head, leaving the core intact to help the "steaks" hold their shape. Carefully slice each cauliflower head lengthwise into 1/2-inch to 3/4-inch thick steaks. You should get 2-3 good steaks from each head, plus some smaller florets. (10 minutes)

03

Step
5 mins

Season the cauliflower: In a large bowl, toss the cauliflower steaks with olive oil and steak rub, ensuring both sides are evenly coated. For smaller florets, toss them in the remaining olive oil and steak rub. (5 minutes)

04

Step
2 mins

Roast the cauliflower: Arrange the cauliflower steaks in a single layer on a baking sheet. Place the smaller florets around the steaks. (2 minutes)

05

Step
45 mins

Roast for 30 minutes, then carefully flip the cauliflower steaks and continue roasting for another 15 minutes, or until they are tender and nicely browned, with slightly crispy edges. (45 minutes)

06

Step

Garnish and serve: Sprinkle the roasted cauliflower steaks with fresh parsley, if desired. Drizzle with a bit more olive oil for added richness (optional). Serve immediately as a side dish or vegetarian main course.

For best results, choose firm, compact cauliflower heads.
Don't overcrowd the baking sheet; roast in batches if necessary to ensure even browning.
The roasting time may vary depending on the size and density of the cauliflower steaks.
Feel free to experiment with different seasonings! A sprinkle of Parmesan cheese during the last few minutes of roasting adds a delightful nutty flavor.
These cauliflower steaks are also delicious served with a squeeze of lemon juice or a dollop of creamy sauce.
