Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

Grease 24 muffin cups or line with paper liners. (2 minutes)

03

Step

In a large mixing bowl, combine chocolate cake mix, water, vegetable oil, and eggs. Beat with an electric mixer on medium speed until well combined, approximately 2 minutes. (2 minutes)

04

Step

Fill prepared muffin cups about 2/3 full with batter. (5 minutes)

05

Step

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 19-23 minutes. (23 minutes)

06

Step

Allow cupcakes to cool completely on a wire rack. (30 minutes)

07

Step

In a separate bowl, whisk together the 2 packages of instant chocolate pudding mix with the cold milk until thickened, about 2 minutes. (2 minutes)

08

Step

Gently fold in the thawed whipped topping into the pudding mixture until smooth and creamy. (2 minutes)

09

Step

Transfer about 1 1/2 cups of the chocolate pudding filling into a pastry bag fitted with a large round piping tip. (2 minutes)

10

Step

Press the piping tip into the center of each cooled cupcake and fill with about 1 1/2 tablespoons of the pudding mixture, creating a hidden chocolate center. (15 minutes)

11

Step

Spoon a heaping tablespoon of the remaining pudding mixture onto the top center of each cupcake, spreading it about 1 1/2 inches wide to resemble a bird's nest. (10 minutes)

12

Step

Press chocolate sprinkles into the edges of the 'nests' and carefully place 3 mini chocolate eggs into each nest to complete the charming presentation. (10 minutes)

For an even richer chocolate flavor, use dark chocolate cake mix and pudding.
Ensure cupcakes are completely cool before filling to prevent melting of the pudding.
If you don't have a pastry bag, a zip-top bag with a corner snipped off will work in a pinch.
Store leftover cupcakes in the refrigerator to maintain the pudding's consistency.

Be careful not to overfill the cupcakes, or the filling will spill out.

I found that chilling the pudding mixture before piping made it easier to work with.
