In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium heat. Add the onion, green onions, celery, and bell pepper. Cook, stirring occasionally, until the vegetables are softened and translucent, about 8-10 minutes.

Pour in the cream of mushroom soup, cream of celery soup, water, creamed corn, and frozen corn. Stir to combine. Bring to a gentle simmer and cook for 20 minutes, stirring occasionally, until heated through and slightly thickened.

Add the shrimp and cook until they turn pink and opaque, about 3-5 minutes. Stir in the half-and-half and parsley. Reduce the heat to low and continue to cook, stirring frequently, for 15 minutes to allow the flavors to meld.

Stir in the liquid shrimp and crab boil seasoning and Creole seasoning. Season to taste with salt and pepper. Ladle into bowls and garnish with additional fresh parsley, if desired. Serve hot.

For a richer flavor, consider using shrimp stock in place of water.
Adjust the amount of Creole seasoning to your preference for spice.
Be careful not to overcook the shrimp, as they can become rubbery.
This soup is best served immediately, but leftovers can be stored in the refrigerator for up to 2 days.
