Pulse the broccoli florets: In a food processor, add half of the broccoli florets. Pulse in short bursts (about 15-20 times) until the broccoli is finely chopped and resembles grains of rice. Transfer to a bowl and repeat with the remaining broccoli. (5 minutes)

Sauté aromatics: Heat the olive oil in a large skillet over medium-low heat. Add the minced onion and sauté until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds, until fragrant, being careful not to burn it. (5 minutes)

Cook the broccoli rice: Add the broccoli rice to the skillet with the onion and garlic. Stir in the sea salt and black pepper. Reduce the heat to low, cover the skillet, and cook until the broccoli is tender-crisp, about 5-7 minutes. Stir occasionally to prevent sticking. (7 minutes)

Finish with lemon: Remove the skillet from the heat and pour the lemon juice over the broccoli rice. Toss to combine. Taste and adjust seasoning as needed. (2 minutes)

For a richer flavor, try using browned butter instead of olive oil.
Add a pinch of red pepper flakes for a hint of spice.
Toasted nuts or seeds, such as almonds or sesame seeds, add a nice crunch.
This broccoli rice is also delicious with a sprinkle of grated Parmesan cheese or a drizzle of tahini.
If you don't have a food processor, you can finely chop the broccoli by hand.
