Follow The Directions

01

Step

Preheat your oven to 375 degrees F (190 degrees C). (Prep time: 5 minutes)

02

Step

Bring a large pot of lightly salted water to a rolling boil. Add the broccoli and cauliflower and cook until tender-crisp, about 2-3 minutes. Immediately transfer to an ice bath to stop the cooking process. Drain well and transfer to a lightly greased baking dish. (Cook time: 5 minutes, Prep time: 5 minutes)

03

Step

While the vegetables are blanching, melt the butter in a saucepan over medium heat. Whisk in the flour and cook, stirring constantly, until the mixture is lightly browned and bubbling, about 3-4 minutes, creating a roux. (Cook time: 4 minutes)

04

Step

Gradually whisk in the half-and-half and Dijon mustard. Bring to a simmer, then reduce heat to low and cook, stirring occasionally, until the sauce has thickened slightly, about 2 minutes. (Cook time: 5 minutes)

05

Step

Remove the saucepan from the heat and stir in the 2/3 cup of Cheddar cheese, Parmesan cheese, and paprika. Season with salt and pepper to taste. Stir until the cheeses are completely melted and the sauce is smooth. (Cook time: 3 minutes)

06

Step

Pour the cheese sauce evenly over the broccoli and cauliflower in the baking dish. Sprinkle the remaining 3 tablespoons of Cheddar cheese and the bread crumbs over the top. (Prep time: 2 minutes)

07

Step

Bake in the preheated oven until the topping is golden brown and bubbly, about 15-20 minutes. Let stand for a few minutes before serving. (Bake time: 20 minutes)

For an extra layer of flavor, consider adding a pinch of nutmeg to the cheese sauce.
Panko bread crumbs will provide a superior crispy topping, but regular bread crumbs can be substituted.
Feel free to experiment with different cheeses in the sauce and topping. Gruyere, Monterey Jack, or even a touch of blue cheese would be delicious additions.
This casserole can be assembled ahead of time and refrigerated until ready to bake. Add an additional 5-10 minutes to the baking time if baking from cold.

The sauce was a little too thick for my liking, so I added a splash of milk to thin it out.
