Add the warmed half-and-half, melted butter, and chopped Boursin® cheese to the potatoes. Mash with a potato masher or use a ricer for an ultra-smooth texture. Continue mashing until the cheese is fully incorporated and the potatoes reach your desired consistency. If the potatoes are too thick, add additional half-and-half, 1 tablespoon at a time, until they are creamy.

Season generously with salt and freshly ground black pepper to taste. Remember that Boursin already contains salt, so taste before adding more.

For an even richer flavor, try using roasted garlic Boursin or one with herbs and spices.
Using a ricer instead of a masher will create the smoothest, most lump-free mashed potatoes.
Don't over-mash the potatoes, as this can release too much starch and make them gummy.
