Pat the chicken thighs dry with paper towels. Season generously with salt and freshly ground black pepper. (2 minutes)

In a large, heavy-bottomed skillet (preferably cast iron) over medium-high heat, melt the butter and olive oil together. (1 minute)

Add the seasoned chicken thighs to the skillet in a single layer, being careful not to overcrowd the pan. Sear the chicken until golden brown on one side, about 5 minutes.

Flip the chicken thighs and continue to cook for another 2 minutes, allowing them to brown slightly on the second side.

Sprinkle the thinly sliced shallots evenly over the chicken thighs. Reduce the heat to low, cover the skillet tightly, and continue to cook until the chicken is cooked through and an instant-read thermometer inserted into the thickest part of a thigh registers 165°F (74°C), approximately 8-9 minutes.

Transfer the cooked chicken thighs to a serving platter and cover loosely with foil to keep warm. (1 minute)

Pour the heavy cream into the skillet with the pan drippings. Add the softened Boursin cheese, breaking it into smaller pieces as you add it. (1 minute)

Increase the heat to medium and stir continuously until the cheese is completely melted and the sauce is smooth and bubbly. This should take about 5 minutes.

Pour the creamy Boursin sauce generously over the cooked chicken thighs. Garnish with freshly chopped chives before serving. (1 minute)

For extra flavor, consider adding a splash of dry white wine to the pan after searing the chicken, before adding the cream.
If the sauce becomes too thick, add a tablespoon or two of chicken broth or milk to thin it out.
Serve with a side of roasted vegetables, mashed potatoes, or rice to soak up all that delicious sauce.
Chicken breasts can be used in place of chicken thighs. Adjust cooking time accordingly.
