Follow The Directions

01

Step

In a medium bowl, whisk together the canola oil, 1/2 cup sugar, red wine vinegar, and 2 tablespoons soy sauce until well combined. Set aside. (Prep time: 5 minutes)

02

Step

In a saucepan over low heat, melt the butter. Add the remaining 2 tablespoons of sugar and stir until fully dissolved. (Prep time: 2 minutes)

03

Step

Crumble the ramen noodles into the butter mixture. Stir in the ramen seasoning packets, sesame seeds, almonds, and 1 tablespoon soy sauce. Cook, stirring constantly, until the ramen mixture is lightly toasted and fragrant, being careful not to burn it. (Cook time: 2-3 minutes)

04

Step

Remove the saucepan from heat and let the ramen mixture cool slightly. (Cooling time: 5 minutes)

05

Step

In a large bowl, combine the prepared vinaigrette, toasted ramen mixture, chopped bok choy, and green onions. Toss gently until all ingredients are evenly coated. (Assembly time: 5 minutes)

06

Step

Serve immediately for maximum crunch, or chill for later enjoyment.

For a richer flavor, try using toasted sesame oil instead of canola oil in the vinaigrette.
Add grilled chicken or shrimp for a complete meal.
The toasted ramen mixture can be made ahead of time and stored in an airtight container for up to 3 days.
If you prefer a sweeter salad, add a tablespoon of honey to the vinaigrette.
Adjust the amount of ramen seasoning to your liking. Start with half and add more to taste.
Garnish with extra sesame seeds and sliced green onions for a visually appealing presentation.
