While the pudding is baking, prepare the hard sauce. In a medium bowl, beat together confectioners' sugar and softened butter with an electric mixer until smooth and creamy. Gradually beat in pasteurized egg product, then stir in vanilla extract. (Prep time: 10 minutes)

Chill the hard sauce in the refrigerator until ready to serve. (Chill time: 30 minutes minimum)

Serve chilled hard sauce over warm blueberry pudding.

For an extra layer of flavor, try adding a pinch of nutmeg or cinnamon to the pudding batter.
If fresh blueberries are not available, frozen blueberries can be used. Do not thaw before adding to the batter.
The hard sauce can be made ahead of time and stored in the refrigerator for up to 3 days.
