In a small bowl, whisk together 2 tablespoons of the milk and 3 tablespoons of the cornstarch until smooth. Set aside. (2 minutes)

In a medium saucepan, combine the remaining milk and sugar. Bring to a simmer over medium heat, stirring occasionally to dissolve the sugar. (5 minutes)

Whisk in the cornstarch slurry and cook, stirring constantly, until the mixture thickens to a pudding-like consistency. (2-3 minutes)

In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let stand for 5 minutes to soften. (5 minutes)

Add the softened gelatin to the hot milk mixture and stir until completely dissolved. Remove from heat and let cool slightly. (5 minutes)

In a chilled bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the vanilla sugar and continue beating until stiff peaks form. (5-7 minutes)

Gently fold the whipped cream into the cooled milk mixture until well combined. (3 minutes)

In a small saucepan, combine the reserved cherry syrup and the remaining 1 tablespoon of cornstarch. Bring to a simmer over medium heat, stirring constantly, until thickened. (3-5 minutes)

Remove from heat and stir in the drained cherries. Let cool slightly. (5 minutes)

In a glass bowl or serving dish, layer half of the cherry mixture, followed by half of the cream mixture. Repeat layers. (5 minutes)

Sprinkle the grated chocolate over the top. Cover and refrigerate for at least 2 hours, or until firm. (2 hours)

For a richer chocolate flavor, use dark chocolate instead of semi-sweet.
If you don't have vanilla sugar, you can substitute granulated sugar and add a splash of vanilla extract to the whipped cream.
Feel free to add a splash of Kirsch (cherry liqueur) to the cherry mixture for an extra layer of flavor (optional).
For a more intense cherry flavor, use fresh cherries when they are in season.
You can prepare this dessert a day ahead of time.
