For an even smoother soup, use an immersion blender to partially blend the soup just before serving. Be careful not to over-blend, as you want to retain some texture. Adjust the amount of cayenne pepper to suit your taste. For a milder soup, omit it altogether. If you don't have dry white wine, you can substitute with a tablespoon of lemon juice or a splash of apple cider vinegar for a touch of acidity. For a vegetarian version, use vegetable broth instead of chicken broth.
