For a vegetarian option, omit the bacon and use a pinch of smoked paprika to add a smoky flavor. Feel free to use other types of greens, such as spinach or chard, in place of or in addition to the beet greens and kale. A splash of lemon juice or apple cider vinegar at the end can add brightness and balance the flavors. If you don't have fresh garlic, 1/2 teaspoon of garlic powder can be substituted, but fresh garlic is preferred for its flavor.
