Follow The Directions

Heat olive oil in a large skillet over low heat. (1 minute)

Add diced bacon and cook, stirring occasionally, until browned and crispy. (3-5 minutes)

Add minced garlic and cook, stirring constantly, until fragrant and lightly golden. Be careful not to burn the garlic. (1-2 minutes)

Add beet stems and chopped kale to the skillet. Cover and cook until the kale begins to wilt. (about 3 minutes)

Add chopped beet greens. Cover and cook until the greens are bright green and tender. (1-2 minutes)

Season with sea salt and freshly ground black pepper to taste. Serve immediately.

For a vegetarian option, omit the bacon and use a pinch of smoked paprika to add a smoky flavor.
Feel free to use other types of greens, such as spinach or chard, in place of or in addition to the beet greens and kale.
A splash of lemon juice or apple cider vinegar at the end can add brightness and balance the flavors.
If you don't have fresh garlic, 1/2 teaspoon of garlic powder can be substituted, but fresh garlic is preferred for its flavor.
