For a vegetarian version, omit the ham hocks and smoked sausage. Add a teaspoon of smoked paprika for a smoky flavor. If you don't have time to soak the lima beans overnight, you can use the quick-soak method. Place the beans in a pot, cover with water, bring to a boil, and boil for 2 minutes. Remove from heat, cover, and let stand for 1 hour. Drain and rinse the beans before using. This dish is even better the next day, as the flavors have a chance to meld together. Try adding a pinch of red pepper flakes for a touch of heat.
