Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

Generously grease a fluted tube pan (such as a Bundt®). (2 minutes)

03

Step

In a large bowl, whisk together vegetable oil, eggs, and sour cream until thoroughly combined. Stir in cake mix, instant vanilla pudding mix, and basil until batter is smooth. (10 minutes)

04

Step

Pour batter into prepared pan. (2 minutes)

05

Step

Bake until the cake is lightly browned at the edges and a toothpick inserted into the thickest part of the cake comes out clean, 40 to 45 minutes.

06

Step

Let cake cool in pan for 20 minutes before inverting to turn cake out onto rack to cool completely. (20 minutes)

07

Step

While cake is cooling, stir balsamic vinegar and sugar in a saucepan and place over medium heat. Bring mixture to a boil, reduce heat to low, and simmer until vinegar syrup is slightly thickened, about 5 minutes. Remove from heat and cool syrup to room temperature. (15 minutes)

08

Step

Just before serving, stir strawberries with balsamic syrup in a bowl; spoon berries and syrup over the cake. Sprinkle cake with fresh mint. (5 minutes)

For a more intense basil flavor, you can steep the basil in the vegetable oil for 30 minutes before mixing the batter. Strain the oil before using.
The balsamic strawberries are best if made a few hours in advance to allow the flavors to meld.
If you don't have fresh mint, you can use a small pinch of dried mint, but fresh is preferred.
Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra touch of indulgence.

I was a bit skeptical about the basil, but it really works! The balsamic strawberries are the perfect complement.

  • Veronica Ernser

The balsamic reduction was a little too tart for my taste, so I added a touch more sugar. It was perfect!
