In a saucepan, heat 1/4 cup of the chicken broth over medium-high heat. Add the minced garlic and red onion, and sauté until fragrant and translucent (about 5 minutes).

Add the diced carrots to the saucepan and continue to sauté for another 5 minutes, allowing them to soften slightly.

Pour in the remaining chicken broth and bring the mixture to a boil. Once boiling, add the pearl barley, reduce the heat to low, cover the saucepan, and simmer for approximately 50 minutes, or until the barley is tender and most of the liquid has been absorbed.

Stir in the diced zucchini, chopped fresh parsley, olive oil, and lemon juice. Simmer for an additional 5 minutes, allowing the flavors to meld together beautifully.

Feel free to substitute vegetables based on what's in season and your personal preferences. Asparagus, peas, or bell peppers would be excellent additions.
