A delightful salad that transforms the classic balsamic chicken flavors into a refreshing and vibrant dish. Tender chicken and savory portobello mushrooms are marinated in a tangy balsamic vinaigrette, then broiled to perfection and served atop crisp romaine lettuce with fresh mozzarella, sweet cherry tomatoes, and fragrant basil.
In a bowl, combine 1/3 of the balsamic vinaigrette dressing with the chicken tenders. In a separate bowl, toss the sliced mushrooms with another 1/3 of the dressing. Reserve the remaining dressing. Allow the chicken tenders and mushrooms to marinate for at least 30 minutes. (Prep time: 5 minutes, Marinating time: 30+ minutes)
Preheat the oven's broiler and position the oven rack about 6 inches from the heat source. (Prep time: 5 minutes)
Remove the chicken tenders and mushrooms from the marinade, discarding any excess liquid. Broil the chicken and mushrooms until the chicken is browned and cooked through, approximately 5 to 8 minutes. (Cook time: 5-8 minutes)
Remove the chicken and mushrooms from the heat and slice the chicken tenders into bite-sized pieces. (Prep time: 3 minutes)
To serve, divide the chopped romaine lettuce among four plates. Top each with the broiled chicken and mushrooms. Sprinkle with cherry tomatoes, mozzarella cheese, and sliced basil leaves. Serve immediately with the reserved vinaigrette dressing. (Assembly time: 5 minutes)
