Stir in sherry, lemon juice, basil, and thyme. Season with salt and pepper. Cook, stirring constantly, until the sauce thickens slightly, about 3-4 minutes. Remove from heat and stir in mozzarella and Cheddar cheese blend until melted and well combined. (10 minutes)

Lightly season red snapper and shrimp on both sides with seafood seasoning. Arrange red snapper fillets in a single layer in the prepared baking dish. Top with shrimp and mushrooms. Pour the prepared cream sauce evenly over the snapper, shrimp, and mushrooms. Sprinkle with Parmesan cheese. (5 minutes)

Bake, uncovered, in the preheated oven until the fish flakes easily with a fork and the shrimp are bright pink and opaque, about 25-30 minutes. (30 minutes)

For a richer flavor, use heavy cream instead of half-and-half.
Serve over a bed of fluffy rice or angel hair pasta to soak up the delicious cream sauce.
Feel free to add other vegetables, such as asparagus or spinach, to the baking dish for added nutrients and flavor.
Adjust the amount of Creole seasoning to your liking. If you prefer a spicier dish, add a pinch of cayenne pepper to the sauce.
