Recipe View Once the beans have simmered for 1 hour, drain them, but reserve the cooking liquid. Pour the beans into a 1 1/2-quart casserole dish. Stir in the chopped onion and the molasses mixture. Add enough of the reserved cooking liquid so that the sauce covers the beans by about 1/4 inch. (10 minutes)

Recipe View Cover the casserole dish and bake in the preheated oven for 10 minutes. Then, reduce the oven temperature to 200 degrees F (95 degrees C) and continue cooking for 6 hours, stirring the beans after they have cooked for 3 hours. (6 hours 10 minutes)

Recipe View Once the beans are tender and the sauce has reduced and thickened to a sticky consistency, remove the casserole dish from the oven. Stir the beans, cover, and allow them to stand for 15 minutes before serving. (15 minutes)

For a smoky flavor, add a strip of bacon to the beans while they simmer.
Adjust the amount of maple syrup or brown sugar to suit your desired level of sweetness.
If the beans become too dry during baking, add a little more of the reserved cooking liquid or water.
These beans are excellent served with cornbread or as a side dish to grilled meats.
