In a very large pot, combine the water, sugar, tomato paste, dried basil, dried minced onion, dried oregano, granulated garlic, salt, cayenne pepper, and pork neck.

Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking. (Approximately 10 minutes)

Reduce heat to low and continue to simmer gently, uncovered, until the sauce has thickened to your desired consistency. Stir occasionally. (Approximately 30 minutes)

Remove the pork neck before serving. Shred the meat from the pork neck and return it to the sauce for added richness, or discard the bones and reserve the meat for another use.

For a smoother sauce, use an immersion blender to partially or fully blend the sauce after simmering.
If you prefer a less sweet sauce, reduce the amount of sugar to 2 cups, or even 1.5 cups. Adjust to your taste.
The pork neck adds a wonderful depth of flavor, but you can substitute it with 1 pound of Italian sausage (removed from its casings and browned) for a vegetarian version, simply omit the pork neck or sausage.
