For a smoother sauce, use an immersion blender to partially or fully blend the sauce after simmering. If you prefer a less sweet sauce, reduce the amount of sugar to 2 cups, or even 1.5 cups. Adjust to your taste. The pork neck adds a wonderful depth of flavor, but you can substitute it with 1 pound of Italian sausage (removed from its casings and browned) for a vegetarian version, simply omit the pork neck or sausage.
