Follow The Directions

01

Step

Preheat the oven to 350°F (175°C). Grease a 3-quart casserole dish with butter or cooking spray. (5 minutes)

02

Step

In a large bowl, combine the mashed butternut squash, softened butter, 1 tablespoon of brown sugar, salt, and pepper. Mix until well combined and set aside. (5 minutes)

03

Step

Melt 1 1/2 tablespoons of butter in a large skillet over medium heat. Add the sliced apples and granulated sugar. Cover the skillet and reduce the heat to low. Simmer until the apples are just tender, about 5-10 minutes. Stir occasionally to prevent sticking. (15 minutes)

04

Step

In a separate bowl, whisk together the flour, oats, 1/3 cup brown sugar, and cinnamon. Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Stir in the chopped pecans. (10 minutes)

05

Step

Spread the sautéed apple mixture evenly into the prepared casserole dish. Spoon the butternut squash mixture over the apples, spreading it gently to cover. Sprinkle the oat-pecan streusel topping evenly over the squash layer. (5 minutes)

06

Step

Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the casserole is bubbling. Let cool slightly before serving. (30 minutes)

For a richer flavor, consider using brown butter instead of regular butter for sautéing the apples.
To make ahead, prepare all components separately and store them in the refrigerator. Assemble just before baking. The streusel topping can also be made ahead and stored in an airtight container in the freezer.
Try using a variety of apples for a more complex flavor profile. Honeycrisp or Gala apples would be delicious additions.
For a nut-free version, omit the pecans from the streusel topping or substitute with toasted sunflower seeds.
