Follow The Directions

01

Step
2 mins

Crush the ramen noodles in the bag, leaving them in relatively small pieces. Set the seasoning packets aside. (2 minutes)

02

Step
8 mins

Heat a large skillet over medium-low heat. Add the crushed ramen noodles and sunflower seeds. Cook, stirring frequently, until they are lightly toasted and fragrant. Watch carefully to avoid burning. (5-8 minutes)

03

Step
5 mins

In a large bowl, combine the broccoli coleslaw mix, chopped pineapple, fresh cilantro, and chopped green onions. (5 minutes)

04

Step
3 mins

In a separate bowl, whisk together the white sugar, cider vinegar, olive oil, sesame oil, cayenne pepper, black pepper, and the reserved ramen seasoning packets until the sugar is dissolved and the dressing is smooth. (3 minutes)

05

Step
2 mins

Pour the dressing over the slaw mixture and toss gently to coat all the ingredients evenly. (2 minutes)

06

Step
1 mins

Add the toasted ramen noodles and sunflower seeds to the slaw just before serving to maintain their crunch. Toss lightly. (1 minute)

07

Step

For best flavor, cover the slaw and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. Toss again before serving.

Toast the ramen and sunflower seeds in advance and store in an airtight container to save time.
Adjust the amount of cayenne pepper to your preference for spice.
If you don't have fresh pineapple, canned pineapple tidbits (drained well) can be used.
For a nuttier flavor, try toasting the sunflower seeds in a dry pan before adding them to the ramen.
This slaw is also delicious with grilled chicken or fish.

I was skeptical about the ramen noodles, but they add such a great texture to the slaw. I also added some shredded carrots for extra color and crunch.
