For an extra crispy crust, lightly brush the arepas with oil before placing them in the skillet. If the dough is too dry, add a tablespoon of water at a time until it reaches the desired consistency. If the dough is too wet, add a tablespoon of cornmeal at a time. Feel free to experiment with different types of cheese, such as Oaxaca, Monterey Jack, or even a blend of cheeses.
