For a richer flavor, use freshly grated Parmesan cheese. If you don't have time to roast the garlic, you can substitute 1 teaspoon of garlic powder. To prevent the onion rings from burning, you can cover the casserole with foil during the last 5 minutes of baking. This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add 10-15 minutes to the baking time if baking from cold.

Feb 25, 2025The French-fried onions got a little too brown for me, so I'll add them later in the baking process next time.

Nov 21, 2024I was a bit hesitant because of the number of steps, but it was so worth it. The roasted garlic really makes a difference.

Jan 9, 2024I found the casserole a little too watery, even after draining the spinach. Next time, I'll try squeezing the spinach in a cheesecloth.
