For extra crispy katsu, try double-dredging the chicken: dip in egg, then panko, then egg again, and finally panko once more. If you don't have an air fryer, you can bake these in a preheated oven at 400 degrees F (200 degrees C) for about 15-20 minutes, flipping halfway through. To add a little zest, try mixing a teaspoon of sesame oil or a pinch of cayenne pepper into the panko bread crumbs. Chicken cutlets can be purchased pre-cut or created by slicing chicken breasts horizontally and pounding to about 1/4 inch thickness.
