Follow The Directions

01

Step

Preheat your oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

Place the acorn squash halves, cut-sides down, in a baking dish with about 1 inch of water. Bake in the preheated oven until the squash is tender and easily pierced with a fork. (45 minutes)

03

Step

While the squash is baking, heat olive oil in a large skillet over medium heat. Add the spicy turkey sausage, breaking it apart with a spoon, and cook until browned and cooked through. Drain off any excess grease. (15 minutes)

04

Step

Once the squash is tender, carefully drain the water from the baking dish. Flip the squash halves so they are cut-sides up.

05

Step

Generously sprinkle brown sugar into the cavity of each squash half, reserving about 1/4 cup of the sugar for topping. Spoon the cooked sausage into the squash cavities, mounding it slightly. Sprinkle the remaining brown sugar over the sausage.

06

Step

Return the filled squash to the oven and bake until the brown sugar is melted and caramelized, creating a luscious sauce. (15 minutes)

07

Step

Let cool slightly before serving. Serve each squash half as a complete and satisfying dish.

For a vegetarian option, substitute the turkey sausage with a plant-based sausage or a mix of sautéed mushrooms, onions, and herbs.
If you prefer a milder flavor, use regular Italian sausage and add a pinch of red pepper flakes for a touch of heat.
To add more depth of flavor, try browning the sausage with a diced apple or pear.
Garnish with fresh parsley or sage for a pop of color and herbaceous aroma.
