In a medium bowl, whisk together the flour and salt for the pastry. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Stir in the ice-cold water with a fork until the dough comes together and can be pressed into a ball. Divide the dough into 5 equal pieces. Place each piece on plastic wrap, flatten into a disc with your hand, and wrap tightly. Refrigerate for at least 30 minutes. (30 minutes)

Preheat the oven to 425 degrees F (220 degrees C). Grease a large rimmed baking sheet.

In a small bowl, whisk together the eggs and milk to create an egg wash.

In a large bowl, combine the venison, potatoes, carrots, mushrooms, onion, rosemary, garlic powder, salt, and pepper. Mix thoroughly.

Remove the pastry from the refrigerator. On a lightly floured surface, roll out each disc, one at a time, into 6-inch circles.

Fill the center of each circle with the meat and vegetable mixture. Place a small pat of butter on top of each filling. Fold the dough over to form a crescent-shaped hand pie and crimp the edges with a fork to seal. Cut a small slit in the top of each pie to allow steam to escape. Transfer the hand pies to the prepared baking sheet. Brush the top of each pie with the egg wash.

Bake in the preheated oven until the hand pies are golden brown, approximately 30 to 35 minutes. Use an instant-read thermometer inserted into the middle of the pie. It should read 135 degrees F (57 degrees C). (30-35 minutes)

For an extra touch of flavor, consider adding a splash of Worcestershire sauce to the venison mixture.
Ensure the dough is cold before rolling it out to prevent it from becoming too sticky.
Serve these hand pies with a dollop of sour cream or a side of cranberry sauce for a delightful contrast of flavors.
