Arrange the zucchini halves in the prepared dish, cut-side up. Sprinkle with Italian seasoning, black pepper, and half of the kosher salt.

In a spacious skillet, heat over medium-high. Introduce the Italian sausage, crumbling and browning it to perfection, approximately 5 minutes. Stir in the onion, garlic, crushed red pepper, reserved zucchini pulp, and the remaining kosher salt. Sauté until the vegetables soften and any excess liquid evaporates, about 5 minutes. Then, blend in the marinara sauce and let it simmer gently for 3 to 5 minutes until it slightly thickens. Remove from heat.
