01

5 mins

In a medium bowl, gently combine the diced watermelon, avocado, red onion, lemon juice, habanero pepper, parsley, and salt. (5 minutes)

02

Step
1 mins

Stir carefully to avoid mashing the avocado.

03

Step
15 mins

Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld. (15 minutes)

04

Step
2 mins

Taste and adjust seasoning as needed, adding more salt or a touch more lemon juice to brighten the flavors.

05

Step
1 mins

Serve chilled over your favorite grilled protein or with tortilla chips.

For a smoother salsa, use a slightly softer avocado. If you prefer a chunkier texture, choose a firmer avocado.
The heat of the habanero can vary greatly. Start with a small amount and add more to your preference. You can also substitute with a milder pepper like jalapeno.
If you don't have fresh lemons, bottled lemon juice will work, but fresh is always best for flavor.
This salsa is best served fresh. While it can be stored in the refrigerator for up to 24 hours, the avocado may brown slightly.

I made this for a party and everyone raved about it! I used jalapeno instead of habanero and it was perfect for those who don't like too much heat.
