In a small saucepan, whisk together the vegetable broth, peanut butter, brown sugar, soy sauce, rice vinegar, minced garlic, minced ginger, and cayenne pepper. Place the saucepan over low heat and bring the mixture to a gentle simmer. Whisk constantly until the sauce thickens slightly and all ingredients are well combined, about 1 minute. Remove from heat and allow the peanut sauce to cool slightly.

Once the udon noodles are cooked, drain them in a colander and rinse immediately with cold water to stop the cooking process and refresh the noodles. Add the drained noodles to the large bowl with the cabbage mixture. Add the cubed tofu and pour the slightly cooled peanut sauce over the noodles and vegetables. Gently toss everything together to ensure the noodles, vegetables, and tofu are evenly coated in the peanut sauce.

For a richer flavor, try using toasted sesame oil in place of vegetable broth.
Feel free to add other vegetables such as broccoli florets, snow peas, or bean sprouts.
Adjust the amount of cayenne pepper to suit your spice preference. A pinch of red pepper flakes can also be used.
If the peanut sauce is too thick, add a tablespoon of water at a time until you reach the desired consistency.
To save time, you can use pre-shredded cabbage and carrots.
