Soak the red beans: Place red beans into a large container and cover with several inches of cool water. Let soak for 8 hours or overnight. Drain and rinse thoroughly. (8+ hours)

Prepare the aromatic base: Add celery, onion, bell pepper, and garlic to a blender and process until just shy of a puree. This creates a flavorful foundation for the dish. (5 minutes)

Sauté the vegetables and spices: Add vegetable oil to a saucepan or stockpot over medium heat. Cook and stir the vegetable mixture for 5 minutes. Add thyme, oregano, black pepper, cumin, and cayenne pepper. Cook, stirring regularly, for 2 minutes more to bloom the spices. (7 minutes)

Simmer the beans: Add 6 cups water, the soaked and drained beans, liquid smoke, and bay leaves. Stir to combine and bring to a boil over high heat. Reduce heat to low, cover, and let simmer until beans are very tender and beginning to fall apart. (2-3 hours)

Cook the rice: Bring the remaining 2 cups of water and rice to a boil in another saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and the water has been absorbed. (20-25 minutes)

Finish the beans: Pour most of the cooking liquid from the beans into a bowl and reserve. Remove the bay leaves. Mash about 1/3 of the beans, adding as much of the reserved liquid as necessary to reach your preferred consistency. Mix with the unmashed beans and season with salt to taste. (10 minutes)

Serve: Ladle the red beans generously over the cooked rice and enjoy!

For a richer flavor, consider using a smoked paprika in addition to or instead of the liquid smoke.
Adjust the amount of cayenne pepper to control the level of spice.
Serve with your favorite Cajun seasoning and Louisiana hot sauce for an authentic touch.
