If you don't have brick cheese, feta, Monterey Jack, or even a mild cheddar can be substituted. The dough can be a bit sticky, so lightly flour your hands and the cutting board to prevent sticking. You can also use a pastry scraper to cut the dumplings. Haluski is best served fresh, but leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave.
