Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin or line with paper liners. (5 minutes)

Spread the oats on a rimmed baking sheet. Toast in the preheated oven until fragrant and lightly golden, about 5 to 8 minutes. Remove from oven and let cool slightly.

In a large bowl, whisk together the toasted oats, flour, brown sugar, baking powder, baking soda, ginger, cinnamon, salt, and allspice. Stir in the chopped walnuts, apricots, and dates.

In a separate bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract. Pour the wet ingredients over the dry ingredients and gently mix until just combined. Do not overmix.

Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake in the preheated oven for 15 to 20 minutes, or until a wooden skewer inserted into the center comes out clean. (20 minutes)

Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. (5 minutes)

For a richer flavor, use brown butter instead of melted butter.
Try adding a handful of chocolate chips for an extra treat.
These muffins freeze well. Wrap individually in plastic wrap and store in a freezer bag for up to 2 months.
