For a vegetarian version, omit the ground beef and add an extra can of beans and some chopped vegetables like bell peppers and corn. To add some heat, include a pinch of cayenne pepper or a dash of your favorite hot sauce. This soup is even better the next day! Store leftovers in the refrigerator for up to 3 days. For a thicker soup, mash some of the beans with a fork before adding them to the pot. Feel free to substitute ground turkey or chicken for the ground beef.
