Follow The Directions

01

Step
8 hrs

Begin by preparing the rice: In a large bowl, combine 6 cups of water with the sweet rice. Allow it to soak for at least 8 hours, or preferably overnight, to ensure optimal tenderness. (Soaking: 8+ hours)

02

Step
5 mins

After soaking, drain the rice thoroughly and rinse it under fresh, cold water. In a saucepan, combine the rinsed rice with the remaining 2 cups of water. Bring the mixture to a vigorous boil over medium-high heat. (Prep: ~5 minutes)

03

Step
20 mins

Once boiling, reduce the heat to the lowest setting, cover the saucepan tightly, and allow the rice to simmer gently until it is tender and all the water has been absorbed. This should take approximately 15 to 20 minutes. (Cook Time: 15-20 minutes)

04

Step
5 mins

While the rice is simmering, prepare the coconut sauce. In a separate small saucepan, whisk together the coconut milk, sugar, and salt. Heat over medium heat until the mixture just begins to simmer, ensuring the sugar is fully dissolved. Do not boil. (Prep: ~5 minutes)

05

Step
30 mins

Once the rice is cooked, transfer it to a serving bowl. Pour the warm coconut milk mixture evenly over the cooked rice. Let the rice stand for at least 30 minutes, allowing it to absorb the fragrant coconut milk. (Rest: 30 minutes)

06

Step
0 mins

To serve, spoon the sweet sticky rice into individual bowls and garnish generously with slices of fresh, ripe mango. Enjoy warm!

For the best results, use Thai sweet rice (glutinous rice).
Full-fat coconut milk will provide the richest and creamiest sauce.
Adjust the amount of sugar to your preference, depending on the sweetness of your mangoes.
If you don't have time to soak the rice overnight, a minimum of 4 hours will still yield good results.
The sticky rice can be served warm or at room temperature.

The soaking time is crucial! Don't skip it. My rice was so much better when I soaked it overnight.

I halved the sugar and it was still plenty sweet for me. A great recipe that you can easily adapt to your own taste.

I've made this several times now and it's always a hit. I like to add a pinch of cardamom to the coconut milk for extra flavor.
