For a smoother soup, use an immersion blender to puree until desired consistency is reached. A dash of cream or a dollop of sour cream adds richness. Consider garnishing with toasted pumpkin seeds for added texture.
Embrace the warmth of autumn with this fragrant and comforting soup. Infused with the subtle sweetness of sweet potatoes and a delicate hint of brandy and allspice, it's a culinary hug on a cool day. Whether you prefer it smooth or rustic, this soup is sure to delight.
In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender but still firm, about 15 minutes.
Drain the sweet potatoes, let them cool slightly, and then mash them. Set aside.
In a medium skillet over medium-high heat, heat the olive oil. Add the chopped Vidalia onion and cook, stirring occasionally, until translucent, about 5 minutes.
Pour in the white wine, red wine, and brandy. Simmer for 5 minutes, allowing the flavors to meld.
Add the mashed sweet potatoes to the skillet, stirring to combine with the onion and wine mixture.
In a separate bowl, dissolve the chicken bouillon cubes in the water. Add this broth to the soup along with the allspice.
Simmer for another 10 minutes, stirring occasionally, to allow the flavors to fully develop. [10 minutes]
Season to taste with salt and freshly ground black pepper. Serve hot, garnished with a swirl of cream or a sprinkle of fresh herbs if desired.
