Follow The Directions

01

Step
15 mins

In a bowl, gently toss sliced strawberries with 1/2 cup of the sugar. Allow the mixture to rest, letting the strawberries macerate and release their flavorful juices (approximately 10-15 minutes).

02

Step
5 mins

In a large pot, bring water and almond milk to a boil. Introduce the old-fashioned oats, reduce heat to medium-low, and cook for 5 minutes, stirring frequently to prevent sticking.

03

Step
5 mins

Incorporate the macerated strawberries, remaining 1/2 cup of sugar, mashed bananas, cinnamon, vanilla extract, salt, and nutmeg into the oat mixture. Stir well to combine, then remove from heat. Fold in the chopped pecans.

04

Step
8 hrs

Lightly grease 18 muffin cups. Fill each cup to the brim with the oat mixture, mounding slightly. Transfer to the freezer and freeze until solid, ideally overnight (minimum 8 hours).

05

Step
2 mins

To serve, remove a frozen oatmeal cup from the muffin tin. Place it in a microwave-safe bowl and heat for 1 1/2 to 2 minutes, or until heated through.

For a richer flavor, try browning the pecans in a skillet before adding them to the mixture.
Experiment with different fruits! Blueberries, raspberries, or chopped apples would be delicious additions.
If you prefer a smoother texture, blend half of the oat mixture before freezing.
To prevent freezer burn, ensure the oatmeal cups are stored in an airtight container or freezer bag after freezing.
