For an even smoother custard, strain the egg mixture through a fine-mesh sieve before pouring it into the cups. If you don't have a steamer, you can use a saucepan with a tight-fitting lid. Place a steaming rack or heat-proof trivet in the bottom of the saucepan, add water, and then place the cups on top. Experiment with different toppings, such as shrimp, edamame, or ginkgo nuts. Adjust steaming time according to your steamer and preference.
