In a large bowl, combine the shredded cabbage, carrots, onion, and jalapeños. Mix well to evenly distribute the ingredients. (5 minutes)

In the bowl of a food processor, combine the egg, lemon juice, white vinegar, and salt. Pulse until the mixture is smooth and slightly frothy. (2 minutes)

With the food processor running on low, slowly drizzle in the vegetable oil through the feed tube. Continue adding the oil until the mixture emulsifies and forms a thick, creamy mayonnaise. Transfer the mayonnaise to a separate mixing bowl. (5-7 minutes)

To the mayonnaise, add the prepared mustard, sugar, apple cider vinegar, ground chipotle chile pepper, and celery salt. Stir until all ingredients are thoroughly combined and the dressing is smooth and homogenous. (3 minutes)

Pour the dressing over the cabbage mixture. Gently fold the dressing into the vegetables until they are evenly coated. Be careful not to overmix, as this can make the coleslaw watery. (3 minutes)

Cover the bowl tightly with plastic wrap or transfer the coleslaw to an airtight container. Refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and develop fully. (2+ hours)

For a milder flavor, remove the seeds and membranes from the jalapeños before chopping. If you prefer a sweeter coleslaw, add an extra tablespoon of sugar to the dressing.
Make sure to taste and adjust seasonings (salt, pepper, sugar) as needed. For a richer flavor, try using half mayonnaise and half sour cream in the dressing.
This coleslaw is best served chilled. It can be stored in an airtight container in the refrigerator for up to 3 days.
