In a large, heavy-bottomed pot (at least 6-quart capacity), combine the tomatoes, apple, granulated sugar, onion, brown sugar, apple cider vinegar, lemon juice, salt, and cayenne pepper. (5 minutes)

Bring the mixture to a vigorous boil over medium-high heat, stirring frequently to prevent scorching. (10 minutes)

Once boiling, reduce the heat to low and simmer gently, uncovered, stirring occasionally to prevent sticking. Continue simmering until the jam has reduced and thickened to a syrupy consistency. This will take approximately 2 hours 30 minutes. The jam should coat the back of a spoon.

Continue to simmer, stirring more frequently, until the jam reaches a jam-like consistency. This may take another 30 minutes. To test for doneness, place a small spoonful of jam on a chilled plate. If it sets up quickly and doesn't run, it's ready.

Remove the pot from the heat and allow the jam to cool to room temperature. The jam will continue to thicken as it cools. (1-2 hours)

Once cooled, transfer the jam to sterilized jars or airtight containers. Refrigerate for at least 2 hours before serving to allow the flavors to meld further.

For a smoother jam, you can use an immersion blender to partially blend the mixture after it has simmered for about an hour.
Adjust the amount of cayenne pepper to your preference. Start with 1/4 teaspoon and add more to taste.
To sterilize jars, wash them in hot, soapy water, rinse well, and then place them in a preheated oven at 250°F (120°C) for 10 minutes.
